Soy Sauce Tofu Stir-Fry

Ingredients:

 1 block firm tofu, cubed

 2 tbsp thick soy sauce

 1 tbsp sesame oil

 1 tbsp rice vinegar

 1/2 cup mushrooms, sliced

 1 bell pepper, sliced

 1/2 cup spinach

 2 cloves garlic, minced

 1-inch ginger, grated

Instructions:

 1. Press the tofu to remove excess water, then cut it into cubes.

 2. Heat sesame oil in a large skillet over medium-high heat. Add the tofu cubes and cook until golden on all sides, about 7-8 minutes.

 3. Remove tofu from the pan and set aside.

 4. In the same skillet, add garlic, ginger, mushrooms, bell pepper, and spinach. Stir-fry for 3-4 minutes until tender.

 5. Return the tofu to the pan, add thick soy sauce and rice vinegar, and toss everything together for 2 minutes.

 6. Serve with rice or noodles.
