Braised Pork Belly

Ingredients:

 2lbs pork belly, cut into 1-inch cubes

 1/4 cup thick soy sauce

 1/4 cup water

 1 tbsp sugar

 1-inch ginger, sliced

 2 cloves garlic, smashed

 1 star anise

 1 tbsp rice vinegar

Instructions:

 1. Heat a large pot over medium heat. Add pork belly cubes and brown them on all sides.

 2. Add garlic, ginger, and star anise to the pot and stir for 1 minute.

 3. Pour in the thick soy sauce, water, sugar, and rice vinegar. Bring to a boil.

 4. Reduce the heat to low and cover. Let it simmer for 1-1.5 hours, or until the pork is tender and the sauce has thickened.

 5. Serve with steamed rice.
