Soy Sauce Braised Mushrooms

Ingredients:

 2 cups mushrooms (shiitake, cremini, or button), sliced

1/4 cup thick soy sauce

1 tbsp sesame oil

1 tbsp mirin

1 tsp sugar

1-inch ginger, sliced

Instructions:

 1. Heat sesame oil in a skillet over medium heat.

 2. Add the mushrooms and sauté for 4-5 minutes until tender and browned.

 3. Add the ginger, thick soy sauce, mirin, and sugar to the pan. Stir well.

 4. Reduce heat to low, cover, and let simmer for 10 minutes, allowing the mushrooms to absorb the flavors.

 5. Serve as a side dish or on top of rice.
